Harissa Shakshouka

Instructions
In a medium cast iron or rock pan, heat olive oil on medium.
Add onion and sauté for 3 minutes until it begins to soften. Add garlic and continue sautéing for 2 more minutes.
Add Harissa and sauté for 2 minutes or until the paste has darkened.
Add whole tomatoes. With a wooden spoon or spatula, crush tomatoes until smooth.
Add spices and herbs. Stir until spices and herbs are mixed well.
Create four deep wells and add an egg in each. Cover and let simmer for 8-10 minutes (depending on how you like your eggs).
Remove from heat. Add fresh herbs, feta and black pepper to taste. Serve immediately with crusty bread or pita.
