Chimichurri Grilled Cheese Croutons
A bite-sized delight for your favourite soup

Instructions
For the filling: In a small bowl, combine butter (½ cup), olive oil (2 Tbsp), red wine vinegar (1 tsp), parsley (2 Tbsp), cilantro (2 Tbsp), shallots (1–2) and garlic (1 clove). Mix well until heavily incorporated.
In the same bowl, add mozzarella cheese (¼ cup), salt ( to taste) and pepper ( to taste). Mix well until it has a smooth consistency.
Place 2 pieces of bread on a cutting board. On 1 piece of bread, spread chimichurri filling. Top with remaining piece of bread and press down slightly to seal. Repeat with remaining 6 slices of bread and chimichurri filling.
On each outer side of the sandwich, lightly spread with butter until evenly coated. Dip both sides of the sandwich into a shallow bowl of Parmesan cheese (¼ cup).
In a small skillet with olive oil (1 Tbsp), lightly fry each side until golden brown.
Slice into little squares, serve and enjoy dunking them in your favourite soup.
