Croque Madame

Honey Dijon Glaze

Instructions

  1. Preheat oven to 350°F. Grease a 9×9-inch square pan.

  2. Cut croissants (6) into 3 pieces. Place into square pan and set aside.

  3. In a small bowl, whisk eggs (4) until smooth. Add heavy cream (½ cup), Gruyere cheese (¼ cup), everything bagel seasoning (2 tsp) and salt (1 pinch). Whisk until combined.

  4. Pour cream mixture over croissants evenly. Tuck in rolled up prosciutto (1 ⅛ cups) and sprinkle with Emmental cheese (¼ cup). Place in the middle rack of the oven for 12 minutes.

  5. While the croissants bake, in a saucepan on medium heat, melt butter (¼ cup). Add Dijon mustard (1 tsp) and honey (1 Tbsp), whisk until combined. Set aside to cool slightly.

  6. Remove croissant bake from oven and glaze with honey Dijon butter. Serve immediately.
